Beloved chef Andre Fowles won the hearts of Jamaicans and foreigners alike as a contestant on Season 5 of the Food Network’s competition show Chopped. He emerged as champion, which elated fans in Jamaica and Caribbean communities abroad. Since then he has helmed the kitchens at Miss Lily’s in New York, Skylark in Negril, Jamaica and privately caters for top celebrities and events under his brand Everything Food Hospitality. Andre also consults and helps develop hotel and restaurant menus, showcases culinary demos and offers cooking lessons. He frequently appears as a guest chef on numerous tv shows and online on the popular internet food show Munchies on YouTube. Despite the fact he continues to soar and rub shoulders with the rich and famous overseas, Andre remains true to his Jamaican roots and is proud to fly the flag wherever he goes.

Appleton rare blend, coconut water, fresh lime
Where is your dream location to cook at?
Buckingham Palace. LOL. I have always been fascinated with that idea, we will see!
What are your favourite and least favourite vegetables to cook with and why?
Favourites – love root veggies like baby carrots, turnips, parsnips, beets. because they are versatile and can be made delicious with basic cooking techniques like roasting.
Least fave – artichoke, celery, cabbage. Can’t really develop beautiful flavours and be the star of a dish.
Describe your top food travel experiences and where do you want to go to for your next foreign food experience?
Otherwise from living in New York. London was truly amazing, the food experience is uniquely diverse with an old world charm and there was a restaurant available for any budget. Southeast Asia is next on my list. specifically Thailand and Vietnam.
What are the kitchen gadgets you cannot do without?
Chef Knife, Kitchen aid mixer, Japanese mandolin, Chinois strainer, Vegetable peeler, Can opener.
What pisses you off in the kitchen?
When someone accidentally knocks over the prep that I have spent a long time making. (e.g.; garnish tray, sauce)
Which celebrity chefs have you cooked with so far and who do you hope to cook with in the future?
I have been fortunate to work with Nina Compton and Marcus Samuelsson. I cooked with Kwame Onwuachi for Food and Wine magazine, was a co host with JJ Johnson for Taste Jamaica at the Food Network’s South Beach Food and Wine Festival, cooked for Guy Fieri’s Beach BBQ, and hosted a James Beard dinner “Island Getaway Fine Dining” in 2019. I would love to cook with Daniel Humm and Clare Smyth.
